There's something so satisfying about a recipe that feels fancy but takes just minutes to make. This 3-Ingredient Watermelon Feta Salad is one of those dishes. It's refreshing, sweet, salty, and perfect for hot summer days, but honestly, I first enjoyed it in the middle of winter, and it was just as delicious.
Whether you're serving it as a light lunch, an afternoon snack, or a side dish for brunch guests, this salad comes together effortlessly and always feels special.
Ingredients (Serves 2)
3 cups chilled watermelon, cubed
½ cup feta cheese, crumbled or cubed
5–10 fresh mint leaves, torn or chopped
Optional Add-Ins
A squeeze of fresh lime juice
A drizzle of extra virgin olive oil and/or balsamic dressing
A drizzle of pomegranate molasses
A sprinkle of tajín (chilli lime seasoning)
How to Make It
- Add the chilled watermelon cubes to a serving bowl.
- If using, squeeze a little fresh lime juice over the watermelon and gently toss.
- Add the feta cheese and mint leaves.
- Finish with any optional toppings you love and serve immediately.
There's no need to add extra salt to this salad. The feta already provides plenty of saltiness. If using lime juice, add it to the watermelon first and then add the feta afterwards to keep the cheese from becoming too soft.
